It will curdle the milk slightly, so don’t panic if you see lumps. This is essentially making that vegan “buttermilk” to give the cake a little tang and to help it rise. Start by mixing together the room temperature dairy free milk with water and apple cider vinegar. This will give you the best results for tall, fluffy cake.
